Authentic Mexican Tacos
Has this ever happened to you! You’ve got a full fridge or cooler in your vehicle on a road trip but you just can’t pass up one of your favourite foods somewhere along the way?! That is exactly what happened to me as you can see in the picture…
Exit 13 southbound on Interstate 35 in Laredo Texas, just 13 miles from Nuevo Laredo Mexico. There are about 3 mobile taco stands set up till late, but the one I buy from is the one closest to the Flying J pump islands on the south side of the entrance road to the J’s parking lot.
Across the street there is a Taco Bell, but let me tell you one thing. Taco Bell is not real Mexican food, not even close. If you think ANY of the big chain fast food places produce real genuine Mexican food you obviously have not tried the real thing. It’s like comparing 10K gold plated medallions to 24k solid gold bars.
What you see in this picture is a corn (hard) taco, with the shell fried on a hot pan with all the fresh fixing’s; Including everything you see: lettuce, tomato, fresh sauteed beef, a healthy slice of avocado on each, freshly cut lime, mmmm….. Just like I had in Nuevo Laredo Mexico in August 2007.
Wash is down with an ice cold (glass bottle) of coca cola, choice of 2 homemade hot sauces (not shown) and you too will be singing La Bamba, Mexico’s National Anthem (just kidding its not their anthem)
